Gobi Paratha

Gobi Paratha (Stuffed Cauliflower Bread/Gobi ke Paranthe/Cauliflower Paratha) can be simply had with raita or curd. It can be served with topped with ghee, dish of your choice and lassi. Ingredients:
atta - 1 cup + extra (for dusting)
water - 1/2 cup
salt - 1 tsp
grated cauliflower - 2 cup
cumin seeds - 1/2 tsp
green chilli (chopped) - 1
coriander leaves (chopped) - 2 tbsp
oil - to toast

Method:
1. Combine whole wheat flour, mint paste, salt & water slowly to make a pilable dough (sticky soft).
2. Knead for about 15 minutes , cover and let it sit for half an hr.
3. Mix cauliflower, cumin seeds, green chilli, coriander leaves, 1/2 tsp salt. Let it settle for about 5 minutes.
4. Squeeze the cauliflower mix in order to take out as much water as possible.
5. Make balls of equal portions and cover it with damp cloth.
6. For each portion, roll it into small puris, stuff the filling and seal it to make a ball.
7. Each ball needs to settle for two minutes before rolling.
8. Roll the balls with less pressure and thicker than roti.
9. Heat the skillet, place the paratha over the skillet and spread 1 tsp of oil making sure the paratha is golden-brown on both sides.
10. Cool the Parathas and store it wrapped in aluminum foil.

PS:
1. Shred the cauliflower using a shredder.
2. If you don’t wait long enough the cauliflower mixture will seep through the edges when rolling the parathas.
3. I always use iron skillet as it works best.
4. Mooli Paratha - replace cauliflower with white radish (mooli), the method remains the same.
5. Can be stored outside for 2 days and refridgerated for 5 days.

Naan

Naan (Plain Naan/Butter Naan/Garlic Naan) is an Indian flatbread, a speciality in North India which is made with yeast and maida in Tandoor.
Ingredients:
Maida - 2 cup
Salt - 1 tsp or to taste
Sugar - 1 tsp
Oil - 2 tbsp (optional)
Yoghurt - 2+1/2 tbsp
Active Yeast - 1 tsp
Warm Water - 3/4 cup
Butter/Ghee - to brush

Method:
1. Dissolve yeast in lukewarm water and let it sit for 10 mins.
2. Add sugar, salt, baking soda, oil, yoghurt, water to the flour and knead to make soft dough.
3. Cover the dough and keep in a warm place for 3-4 hours. The dough will be almost double in volume.
4. Pre-heat the oven with high broil settings.
5. Knead the dough for few minutes and divide the dough into six equal parts.
6. Dust lightly with dry flour and roll it into 8-inch oval shape.
7. Lightly wet hands, take the rolled Naan, flip them between palms and broil them for 2 to 3 mins (till it turns golden brown color on top).
8. Brush lightly with ghee and serve with dish of your choice.

PS:
1. Can place about 2 to 3 naan at time and broil it.
2. Wait 2 to 3 minutes before baking the next batch of naan. It gives oven the chance to get heated again to max.
3. Butter Naan - add some butter while kneading the dough.
4. Garlic Naan - add minced garlic while kneading the dough.

Croissant

Croissant (Plain Croissant/Croissant made with ready made puff pastry sheet) is a simple breakfast breads at my home. I love the perfect mix of chewy and fluffy taste it has. I don't mind eating it every day at the breakfast forever. Using the ready made puff pastry sheet reduces tons of work to be done before following the below recipe. Ramya's Kitchen Corner is celebrating it's First Anniversary with this post. I remember blogging initially for recipe collection (just personal use) most of the time. Then getting inspired by fellow bloggers' blog, I intended to make it more useful for the public and making it more than a recipe blog - A FOOD blog.

Arundhuti has tagged me on baking for a noble cause. Nothing makes me more happy and satisfied than involving myself in these kind of things... Let's make the moments merrier for all! Thanks for the tag at the right time dear! Breadline Africa is a registered charity in South Africa that is seeking to put an end to poverty in South Africa and further afield in Africa. Their aim is to break the cycle of poverty and help communities to achieve long term self-sustainability. Breadline Africa was founded in 1993 by social workers and communities in South Africa with minded colleagues in Europe, (who were well placed to source out donations). They are geared to help fund small ground level projects in Africa which are most likely to succeed with financial help.

It launched the Worldwide Blogger Baker Bake-Off Challenge aiming at raising $ 1 M in funds. This bake-off gives us baking bloggers the power to make a difference in this world. What do we do? Bake bread. Give Dough. Feed Africa. Vals says, "You can sign up for the campaign, make a donation, upload your bread recipes and document your culinary adventures in the media center to spread the word. You don't have to donate money but simply just mention the campaign and create awareness."

The following is quoted from the Breadline Africa Bake-Off site:
On 15 October, we launched The Breadline Africa Worldwide Blogger Bake Off.The Blogger Bake Off is an online campaign that challenges bloggers to get involved by baking bread, and then acting by donating to end poverty. And then, challenge their readers and five other bloggers to do the same.

With the money raised, we will be supporting grass roots community projects aimed at ending poverty and hunger in Africa. We’ll be placing container kitchens, vegetable gardens and more in poor communities, sending emergency food relief where needed and helping these poor communities to help themselves.

The rules for bloggers are outlined below:
1. If you are tagged, copy and paste the rules into your post.
2. Bake bread, do something you wouldn’t normally do, and blog about it. Upload your picture and recipe.
3. Give dough, donate to Breadline Africa and help us end poverty.
4. Tag five bloggers, and ping us so we know you’ve done so.
5. The person who raises the most funds will get to name a Breadline Africa community kitchen and win $500 Amazon Vouchers. I'm not tagging anyone particularly. If you like to bake one for a good cause, pick up and bake one. Now to the recipe.

Ingredient:
Puff Pastry sheet - 1

Method:
1. Cut the pastry sheet into squares.
2. Cut across each square across to form pointed triangles.
3. Make little crescents by rolling the shortest side tautly up to the tip of the triangle.
4. Place all on a parchment covered tray, bake in a preheated oven at 180°C for 15 to 25 minutes, depending on size, until they are golden brown.

PS:
1. Nutella Croissants - Spread each triangle with nutella spread before rolling them up into croissant shapes. Similarly you can use chocolate, fruits etc as spread.
2. Can brush with egg or butter before baking for more taste and glazy looks.
3. Can be had with any spread of ur choice like jam, marmalade, syrup etc too.
