I am always asked to bring my mom’s cheeseball to parties and holiday gatherings. It’s a family favorite. But, I thought maybe I could modify it and make something original and just as yummy. Meet the new favorite!!!

This “cheese ball” is more like a spreadable chicken salad. It’s great on any cracker, but I prefer Kashi’s Fire Roasted Vegitable Cracker.

Combine and Mix Well:

1 8oz package of cream cheese
1 can of cooked, chopped chicken|
1/4 t soy sauce
1/4 t salt
1/8 t cyanne pepper

Add and Stir Gently:

6 sundried tomato halves, chopped
3 green onions, chopped
8-10 oz finely shredded motzerella
parmesan cheese to taste
(I use a 5-cheese italian blend by Kraft instead of the motzerella and parmesan. It’s perfect!!!)

If you wish, you can add some finely chopped herbs, or dried herbs to taste. I sometimes throw in a little garlic powder and oregano…

Form mixx into a ball, and chill. Sevre on crackers!

Italian Chicken Penne
1 1/2 cup (uncooked) Penne Rigate pasta
1 1/2 cup mozzarella cheese
parmesan cheese (sprinkle to taste)
2 large chicken breasts, cooked and cut into bite sized pieces
spaghetti sauce
Pizza Seasoning
Italian Seasoning
Oregano
Spray 8×8 baking dish with cooking spray. Preheat oven to 350`. Cook pasta until tender. Put pasta on bottom of baking dish, sprinkle with 1/2 cup mozzarella and parmesan cheese. Cover with cooked, cut up chicken and sprinkle again with 1/2 mozzarella cheese and parmesan cheese. Top with spaghetti sauce and Sprinkle with remaining mozzarella cheese and parmesan cheese. Sprinkle with Pizza Seasoning, Italian Seasoning, and Oregano to taste. Bake for 20 minutes.

I was reading a post by Homemaker’s Cottage, and I fell in love with this Snowman Cheese Ball!! I’d already offered to bring a cheese ball to a Christmas Party on Saturday, so I decided I’m going to try this with my mom’s recipe!

I plan to use some big pretzel sticks in the center to help hold the balls together since I have to take it somewhere… I want to try the asperagus or some celery stalks for the arms, olives for the bottons, mouth, and eyes, and a carrot for the nose. For the wreath on his head I might try craisins and chives. (I think I could braid chive leaves…) I’m stuck on the ribbon, but am wondering if I peeled a pomegranite with a vegie peeler if I’d get something workable?

Hopefully I’ll figure something out and get a cute picture to share with you all!!
