
I am craving of menudo and usually if I like to eat this kind of Filipino dish. I just order to my god mother, but since our economy is not doing well. I choose to cook and try the recipe I found online. I use pork and pork liver for my adobo because I just follow the recipes, but there's other ingredients that I just added into it because I like to try my own way. It came really good although I didn't like liver. My husband prepared just use pork and chicken together which next time I will try with chicken., but my menudo taste really good and I serve with white rice. Here's the recipe you might to try.
Ingredients
2 lbs pork belly
1 lbs pork liver ( next time I cook I don't use liver)
2 cups water
1 meduim onion
1 large carrot
1 piece red pepper
1 large potato
2 large tomotoes
1 glove garlic
3 pieces bay leaves
3 tbsp. oil
salt
pepper
1 small box raisin
4 tbsp. soy sauce
1 magic sarap
1 menudo mix ( any brand name)
Preparation:
Sliced pork, liver, carrot, pepper, potato into cube and separate pork and liver in each bowl. Use magic sarap to marinate the pork for 30 minutes. Cut onion, tomotoes and minced garlic. In the big pan sautee garlic, onion and tomotoes. Add pork meat and liver stir it and cover until it sautee brown then add soysauce and pepper. In sa big bowl use the 1 cup water to mixed the menudo mix then poured into the pan together with another cup of water. If necessary need more water, you can add a little more. Let it boil then add potatos, carrots and bay leaves until cook. Add the salt, raisin and pepper let it boil for about 5 minutes . Serve hot with white rice.
